The Aceituno family
The name Aceituno is synonymous with olive. The Egyptian “Zaitun” means “wild olive”, a surname that defines to perfection to this jiennense family of marked olive tradition.
For decades, the Aceituno-García family has taken care of the lands in order to obtain the best fruit. Several generations linked to the cultivation and tillage of the land, in a traditional way, being “mountain olive groves” where the main tool was the hand of man.
Four elements converge in the gestation of these fruits:
Grateful lands, rainfed crops that year after year put their crops ahead thanks to their vegetable covers that allow to keep the humidity and the freshness and to nourish the plant in the hottest months.
Water, which without falling in an abundant or torrential way, makes its presence in the right extent in the mountains of the Sierra Sur, keeping the plant hydrated throughout the year without need for irrigation, unlike other areas of the countryside.
Soft air, which rocks the plant, oxygenates it, refreshes it and gives it vitality, contributing to its growth. Surrounded by a Mediterranean mountain and without any pollution due to the lack of industrial activity around them, the olive trees of the Sierra Sur dance to the sound of the gentle mountain breeze, showing the silver underside characteristic of the picual variety leaf. nickname of “snowed”.
Fire, the sun of the summer months propitiates an ideal temperature at the moment of the flowering accelerating the gestation of the fruit. It is a Mediterranean climate of interior, but without overfishing the plant thanks to the freshness that brings the proximity to the mountain, which allows, in turn, to have a green fruit on dates in which in most places is already ripe, and from this you get this AOVE, an intense green color, which gives you the high index of chlorophyll and polyphenols it contains, and especially notable for its enormous content in alpha-tocopherol (vitamin E) what make AOVE ACEITUNO a fresh olive juice, with a balanced flavor in intensity and fruity aromas that evoke freshly cut grass, leaf, olive branch, … highly healthy as it is a natural antioxidant for our body.
The new Generation
UNOACEIT is born of the need to continue the hard work throughout the history of our family in the cultivation of the land of olive and the harvesting of the olive, our symbol of identity.
For generations, these mountain lands were hand-plowed, plowed by beetles, hoe-hoofed, fertilized with natural manure, … preparing their decks, to obtain the best fruits from their olive trees, traditionally varnished olives with chestnut sticks, harvested of the soil one by one in baskets of esparto.
This concept of traditional olive grove was changing slightly, as the steep terrain does not allow more mechanization, but always, the last phase of the process, obtaining our own AOVE. That hard work was always lacking in continuity, since it ended after harvesting and transfer to the mill, where other hands were in charge of obtaining the product with the fruits of all the harvesters.
From this need, to complete the entire process, to see the fruit of so much dedication and work, to give a new generational relief to these lands remain in the hands of the family, was born ACEITUNO, our own oil, for which are prepared the lands with mime, select the trees that will provide each campaign with the best fruits, depending on the weather, the terrain, … the precise moment of harvesting is chosen, with the right temperature, ensuring that the fruit does not suffer any erosion and is transferred to the mill in hours, in the best conditions, for its instant milling, thus preserving all its properties intact. A new approach to maintaining the traditional olive grove, to get the best of it and to make it exclusively, through a limited production, to the best tables in the world.
That is our philosophy, a job well done to bring an exclusive product, within reach of the most exquisite palates.
