Aceituno´s Family

The last name Aceituno is synonymous with olive. The Egyptian "Zaitun" comes from, which means "wild olive", a family name that perfectly defines this family from Vienna with a marked olive tradition.

Durante décadas, la familia Aceituno-García ha cuidado las tierras con mimo para obtener el mejor fruto. Varias generaciones ligadas al cultivo y a la labranza de la tierra, de manera tradicional, al tratarse de fincas de “olivar de montaña” en donde la principal herramienta era la mano del hombre.

Four elements converge in the gestation of these fruits.

  Lands grateful, dryland crops that year after year take their crops forward thanks to their vegetable covers that allow to keep moisture and freshness and nourish the plant in the hottest months.

    Water, that without falling abundantly or torrentially, makes its presence in its fair measure in the mountains of the Sierra Sur, keeping the plant hydrated throughout the year without the need for irrigation, unlike other countryside areas.

   Wind, soft, that rocks the plant, the oxygen, refreshes it and gives it vitality contributing to its growth. Surrounded by Mediterranean mountains and without any contamination due to lack of industrial activity around them, the olive trees of the Sierra Sur dance to the sound of the gentle mountain breeze, showing the silvery underside of the picual variety leaf, so they receive the nickname of "snowfall".

    Fire, the sun of the summer months promotes an ideal temperature at the time of flowering accelerating the gestation of the fruit. It is an indoor Mediterranean climate, but without whipping the plant excessively thanks to the freshness that brings the proximity to the mountain, which in turn allows you to have a green fruit on dates in which in most of places are already mature, and from which this EVOO is obtained, of an intense green color, which gives it the high index of chlorophyll and polyphenols that it contains, and especially standing out for its enormous content of alpha-tocopherol (vitamin E) what make the OLIVE EVOO a fresh olive juice, with a balanced flavor in intensity and fruity aromas that evoke freshly cut grass, leaf, olive branch ... highly healthy as it is a natural antioxidant for our body.

The new Generation

UNOACEIT was born from the need to continue hard work throughout the history of our family in the cultivation of the olive grove and the olive harvest, our identity symbol.

For generations, these mountain lands were carved by hand, plowed by means of beasts, dug by hoe, fertilized with natural manure, ... preparing their roofs, to obtain from their olive trees the best fruits, olives traditionally beached with chestnut rods, harvested from the ground one by one in esparto spurs.

That concept of traditional olive grove was changing slightly, because the steep terrain does not allow for greater mechanization, but always, the last phase of the process was lacking, obtaining our own EVOO. That hard work was always lacking continuity, because it ended after the collection and transfer to the mill, where other hands were responsible for obtaining the product with the fruits of all the growers.

Our Philosophy

De esa necesidad, de culminar el proceso completo, de ver el fruto de tanta dedicación y trabajo, de dar un nuevo relevo generacional para que estas tierras sigan en manos de la familia, nació ACEITUNO, nuestro propio aceite, para el cual se preparan las tierras con mimo, se seleccionan aquellos árboles que proporcionarán cada campaña los mejores frutos, en función de la climatología, del terreno, se elige el momento preciso de recolección, con la temperatura adecuada, procurando que el fruto no sufra erosión ninguna y sea trasladado a la almazara en horas, en las mejores condiciones, para su molturación al momento, conservando así todas sus propiedades intactas. Un nuevo enfoque de mantenimiento del olivar tradicional, para obtener lo mejor de él y hacerlo llegar de forma exclusiva, mediante una producción limitada, a las mejores mesas del mundo.
